While for the most part we like our ciders bone dry, there are occasions where a little sweetness can enhance your experience of a cider. There are lots of techniques a cidermaker can use to produce cider with some natural residual sugar. Here we use frozen organic Northern Spy and Ida Red apples and the process of cryoextraction to produce a rich and naturally sweet apple essence.
